In any study where samples are from some object these samples are typically not analyzed instantly at the time of sampling. Often samples are frozen and then analyzed later. This poses the question of how similar the chemical content of the sample really is after freezing and thawing and after time has passed. In this study we will systematically investigate the effect of storage time and freezing on a number of metabolites relevant to consumption of beer or alcohol using both short time degradation studies as well as use historic data collected at the department.
